Easy Chuck Steak Recipe:

Ingredients:

  • 1 kg chuck steak
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme
  • 1 onion, finely diced
  • Salt and pepper to taste
  • 1 tablespoon wholegrain mustard
  • 2 cups of stock made with our Stock Bones
  • Glug of Worcester sauce
  • Quarter cup of red wine

Prep the Steak: Remove the chuck steak from the refrigerator the day before cooking. Cut it into cubes and place the cubes in a bowl.

Marinate: Add the wholegrain mustard, Worcester olive oil, salt and pepper and the fresh thyme and massage them into the meat. Cover and pop back in the refrigerator to marinate for up to 24 hours.

Get the Pan Hot: Heat some extra olive oil in a large pan over high heat. When it’s hot, add the cubed beef, being careful not to crowd the pan; quickly brown the meat on all sides, then add the diced onion. 

Prepare for the Slow Cooker: When the onion is soft, add the red wine, and after 1 minute, turn down the heat to medium. Let the meat cook in the pan for five more minutes, then transfer to your casserole dish or slow cooker - add the stock.

Finish in the Oven: Using a deep casserole dish with a lid, place the beef in an oven preheated to 200°C. Once the dish is in the oven, turn it down to 150°C for 2.5 hours or until done to your liking - you could stir the casserole at the one-hour mark to assess.

Use the slow cooker: If you use the slow cooker method, you can pop this on low in the morning before work, and it will be tender and delicious when you get home.

Serve It Up: Serve this with a baked potato and salad in summer, or go hearty with a garlic mashed potato and some green beans for winter warming.
