Each cut of our premium Matangi beef has a marble score but what does this mean?
Cattle store fat in two different ways, the intermuscular fat, often found on the side of your steak and generally trimmed off before cooking. Then there's the intramuscular fat within the muscles, rippled throughout as little white spots and streaks. This is known as 'marbling'.
Marbling affects the meat's tenderness, texture and flavour - attributes that determine an optimum eating experience. This marbling is a vital aspect of high-quality beef. It is high in good fats such as monounsaturated fats and omega-3 fatty acids. Our beef is expertly graded each week by an independent, qualified assessor, who looks at the rib eye muscle of each animal, for marbling, pH, meat and fat colour.
Our Matangi cattle live a happy and low-stress life in their time with us. We start with great breeding, and it is our priority to feed them well every day, producing those intramuscular fats which means an optimum marble score, creating an exceptional melt-in-the-mouth experience.
Typically grass fed Angus beef achieves marble scores of 1 or 2. We refer to a Marble scores of 4 and higher as "Matangi Reserve Grade".
We are proud to have achieved over 74% Reserve grade (Marble score 4+, with low pH, specific meat and fat colour) in our animals during 2023/24 season. When in season, this is sold on a first-ordered, first-served basis.

Matangi Angus Beef is aged on the bone for 21 days before being cut to order by our in-house butchery team. This process allows for the flavour and tenderness to develop.
You may notice that upon opening your product there is a more intense aroma, or there may be areas of the product that have slight variations of colour – this is due to the aging process of Matangi Angus Beef cuts. It is completely safe to eat.
