Cooking Instructions

Preheat Oven: Preheat your oven to 200°C (400°F).

Season: Rub the lamb with olive oil, salt, pepper, and your choice of herbs (like rosemary, thyme, or garlic).

Sear: Heat a pan over medium-high heat and sear the lamb on all sides until browned, about 4-5 minutes.

Roast: Transfer the seared lamb to a roasting dish and roast in the oven for 20-25 minutes for medium-rare or 25-30 minutes for medium.

Rest: Let the lamb rest for 10 minutes before slicing to retain its juices.

Lush grass on nutritious soil, clean water in every paddock, shady trees, all contours of landscape – the perfect backdrop for contented animals. And we're constantly improving these wonderful places by planting native trees, fencing off creeks, protecting the soil and our water sources.
