Thai-style Matangi Beef Salad

Method:
- Mix marinade ingredients in a dish and add whole rump steak. Turn to coat both sides and leave overnight, turning once more during this time.
- Combine sugar, spring onion, chilli and garlic to a paste in a food processor. Transfer to a small bowl, add fish sauce and lime juice to taste.
- Shred lettuce and arrange in mounds in centre of 2 serving plates.
- Heat grill or char-grill pan to very hot, grill Matangi rump steak for 2 mins each side, leaving it very rare.
To Serve:
Rest steak for 2-3 mins, slice diagonally and place on lettuce. Spoon over sauce, scatter spring onion and mint, serve immediately with remaining sauce on the side.
