Frequently Asked Questions
Chicory-finished lamb refers to lambs that graze on chicory pasture—a nutrient-dense forage—for the final 35+ days before processing. Chicory supports healthy digestion and naturally boosts intramuscular fat and Omega-3 levels, helping produce lamb that is more tender, juicier, and richer in flavour. It also grows well in drier New Zealand conditions, making it an excellent finishing crop for premium meat.
Matangi Lamb is bred for quality and flavour, using Romney ewes and Kelso Prime Q Rams to produce meat with ideal marbling and tenderness. Raised in Hawke’s Bay and finished on chicory, our lamb offers a premium grass-fed eating experience that’s GMO-free, antibiotic-free, and carefully managed from pasture to plate.
We maintain a high-performing flock of Romney ewes, prized for their temperament and meat quality. They’re paired with Kelso Prime Q Rams, selected specifically for their high intramuscular fat (IMF), which contributes to the succulent, flavourful texture of our lamb.
