Frequently Asked Questions
You’ll find a selection of roasting favourites such as rump, silverside, topside, eye fillet, and bolar blade — each prepared for tenderness and flavour.
Our beef is raised on our two Hawke’s Bay properties, bred for eating quality, and grown for a minimum of 24 months. Combined with low-stress farming practices and dry-aging, this results in roasts with superior marbling, flavour, and consistency.
Roasting slowly at a lower temperature is best for leaner cuts, while searing then finishing in the oven works well for eye fillet and rump. For inspiration, see our Recipes & Cooking Ideas.
